The final report is Packaged Facts’ Meat and Poultry Trends in the US.  This 182 page study was published in April 2013 and it covers the overall trends of the industry.  Meat consumption in the US has been on the decline for almost a decade, due to increased health consciousness and problems with the economy.  More consumers are also switching to poultry instead of red meat, because of the health concerns.  It is estimated that retail sales of meat and poultry products were at $85 billion in 2012, up from $73 billion in 2008.  They are projected to be valued at $98 billion in 2017.
