This report is most comprehensive and discusses the results of a survey taken from 280 businesses, which asked respondents to prioritize drivers and challenges associated with the environmentally sustainable production of healthy food. For companies in the beverage subsector, the top driver for innovation was the consumer preference for “natural” foods. Consumer preferences regarding health, ingredients, food claims are significant in their research & development of new products.
It also discusses the drivers for innovation in this category as well as the challenges and barriers such as funding, skills and resources, and lack of demand.
