Processed meats are meat products that are preserved by salting, smoking, curing, or adding chemical preservatives. These products primarily include sausage, bacon, hot dogs and corndogs, ham and ham lunchmeat, packaged lunch kits, meat snacks, lunchmeat, and other processed meat. Processed meat products generally contain sodium nitrate, which is used to inhibit the growth of the bacteria causing foodborne diseases.
