Manufacture of Bakery Products : This report focuses on the manufacture of bakery products which include bread, rolls, baked confectionery such as muffins and croissant, and savoury biscuits. The bread and rolls category is worth an estimated R22bn per annum and accounts for 63.5% of all sales in the South African bakery sector. The bread sector is dominated by four bakeries that are owned by the four largest food companies that also control the wheat milling market: Sasko and Duens bakeries are owned by Pioneer Foods, Albany bakery is owned by Tiger Brands, Blue Ribbon bakery is owned by Premier Foods and Sunbake bakery is owned by Foodcorp.


A sector Under Pressure: Although bread is a staple food for more than half the South African population, bread sales are decreasing. Stakeholders attribute this to a number of factors including health concerns over the use of genetically modified wheat, the move away from a high carbohydrate diet and the steady increase in the price of a loaf of bread. The South African Chamber of Baking (SACB) recently warned that the reduction in hectares of wheat planted and the effects of the current drought will continue to place pressure on the value chain of the entire bakery products sector.
