Russia is set to remain the world’s second-largest producer of cucumbers, with production increasing to 1.8 million metric tons by 2026. The country has seen an average growth rate of 2.2% each year since 1997. In 2021, Russia was second in the global rankings with 1.7 million metric tons of cucumber production, behind China’s 1.7 million metric tons. Ukraine and Mexico were the next two highest producers at 1.5 and 1.2 million metric tons, respectively.
