Mexicans are eating more eggs than ever before. Consumption is projected to increase by 0.6% annually, reaching 2.6 million metric tons by 2026. This places Mexico fifth in the world, behind Japan with 2.5 million metric tons. The United States, India and Japan are ranked second, third and fourth respectively. Since 2017, Mexican demand has increased by 0.4% each year.
