Mexico is set to become the world’s tenth largest producer of eggplant by 2026. The country has seen a steady increase in eggplant production over the past five decades, with a CAGR of 2.7%. In 2021, Mexico’s eggplant production reached 201,710 metric tons, up 3.2% from 1966. Spain was the world’s largest producer, with 201,710 metric tons, followed by India, Egypt and Iran. By 2026, it is expected that Mexico's eggplant production will reach 236,920 metric tons.
