India is set to produce 14 million metric tons of eggplant by 2026, according to estimates. That's up 1% from the 13.1 million metric tons produced in 2021, when India was the world's second-largest producer. Since 1966, Indian eggplant production has grown at a rate of nearly 1% per year. China was the world's largest producer in 2021, while India, Egypt and Iran were the second-, third- and fourth-largest producers, respectively.
