Ivory Coast is on track to become one of the world's leading producers of eggplant by 2026. This year, the country is set to produce 113,820 metric tons of eggplant, a 1.1 percent increase from 2021. Since 1966, Ivory Coast has seen an average annual increase of 2 percent in eggplant production. The U.S. was the leading producer of eggplant in 2021 with 106,390 metric tons. India, Egypt and Iran took the second, third and fourth spots, respectively.
