Ghanaian eggplant production is set to reach nearly 67,000 metric tons by 2026, according to a report from 1966. This represents a growth of 2.3% each year from 2021, when the country produced 58,910 metric tons. The Netherlands overtook Ghana in 2021, producing 58,910 metric tons of eggplant. India, Egypt and Iran were the next three largest producers, respectively.
