Spain is set to produce 267,250 metric tons of eggplant by 2026, according to recent figures. This marks an increase of 1.1% per year since 1966, when the country produced 250,710 metric tons. In 2021, Spain was the ninth largest producer, overtaken by the Philippines. India, Egypt and Iran followed in second, third and fourth place respectively.
