Azerbaijan is set to produce 88,650 metric tons of eggplants by 2026, a 1% annual increase since 2021, according to projections. The country's eggplant production has been on a slight decline since 1997. Pakistan has surpassed Azerbaijan in production, producing 83,630 metric tons in 2021. India, Egypt and Iran were respectively the second, third and fourth largest producers.
