Indian demand for caviar is set to reach 1,930 kilograms by 2026. This is a 2.6% year-on-year increase from the 1,630 kilograms seen in 2021, which was 83rd in the world rankings. Serbia overtook India in 2021 with 1,630 kilograms. Japan, South Korea and the United States were the top three countries for caviar consumption. Since 1996, Indian caviar demand has grown at an average rate of 1.5% year-on-year.
