Ecuador is set to see a decline in its consumption of cassava over the next five years. The country's consumption of the vegetable is projected to drop 2.6% year on year between 2021 and 2026, from 59.03 Thousand Metric Tons to 57.03 Thousand Metric Tons. This follows a decrease of 0.5% since 2017. Nicaragua overtook Ecuador in 2021, consuming 69 Thousand Metric Tons. Indonesia, Ghana and Mozambique ranked 2nd, 3rd and 4th respectively. Equally, Ecuador's production of cassava is set to decline, with a 1% average year on year drop between 2021 and 2026. Supply is expected to fall from 68,280 Metric Tons in 2021 to 66,280 Metric Tons in 2026. This follows a decrease of 4.4% since 1966. Fiji overtook Ecuador in 2021, producing 72,410 Metric Tons. The Democratic Republic of the Congo, Thailand and Ghana ranked 2nd, 3rd and 4th respectively.
