In 2023, France led European organic spelt and wheat production at 503.48 thousand metric tons, followed by Romania and Sweden at 171.7 and 165.38 thousand metric tons, respectively. Significant year-on-year growth occurred in Belgium (42.06%), Poland (36.91%), and Ireland (29.25%). Conversely, Bulgaria and Greece saw declines of -8.86% and -17.38%, respectively. Over the past five years, production has generally trended upward, noted in particular by double-digit gains in several countries.
